Antigua Guatemala

Antigua Guatemala, in the Department of Sacatepéquez, (Cerro de Hierba), may be the most outstanding and best-preserved colonial city in Spanish America. Tourists visit Antigua Guatemala every year from around the world to enjoy its natural beauty and historic monuments. The Spanish Colonial style permeates every part of the town: its houses, churches, squares, parks, ruins, traditions and folklore. Antigua is a city of charm and color where you can see and buy an overwhelming variety of attractive, handmade products that honor the traditions of generations of artisans.

Antigua sits in a Highland valley (1,500 meters) overlooked by the spectacular Agua Volcano (3,765 meters high). A little further away are two other volcanoes Acatenango and the always smoking, sometimes erupting, Fuego.

Rustica Del Sol Plantation

Rustica Del Sol is a small coffee plantation owned by Antigua Coffee Company of Regina, Saskatchewan Canada. Rustica Del Sol is located on the lower slopes of Volcan De Aqua in the Antigua Guatemala coffee growing district. Rustica Del Sol is situated at 5500 Ft above sea level and consists of 100% Arabica bourbon coffee trees. The shade trees are Gravilea and Macadamia. The plantations day to day operations are run by a local coffee expert from Cuidad Vieja, Guatemala.

Harvest

The harvest occurs every December and last until the end of March to allow all tree grown cherries to make the transition from green cherry to red or burgundy. (Absolutely no green cherries picked) Length of harvest is determined by how long it takes the green cherries to turn color, this can only happen on the tree. The entire crop is hand-picked by local farmers. This method is labor intensive but necessary to harvest the finest arabica beans.

Processing

In the Wet Process, the fruit covering the seeds/beans is removed before they are dried. The wet method requires the use of specific equipment and substantial quantities of water.

Red cherries are firstly loaded into a holding tank built elevated above the process to allow for gravity feeding of the ripe cherries to the depulper. A steady stream of water is used to move the cherries in cycle.

The depulper separates the cherries from the coffee beans and send the cherries husks a different direction than the washed coffee beans. The cherry husks are bagged at the end of this process to allow for sun fermentation of 2 days. The sun fermentation of the husks removes the acidity of the cherry husks so that they can be used as organic fertilizer.

When the coffee travels the opposite direction as the cherry husks from the depulper it travels to the screen tank. This is where bad and unripe fruit will float which will be removed and discarded., the ripe fruit will sink.

The coffee beans are covered in a slippery mucilage skin. The coffee fermentation tanks are used to remove the mucilage before drying. The de-pulped coffee beans are put into cement tanks with water, covered with burlap and are allowed to ferment for 16-36 hours. The coffees picked are usually fermented in different tanks according to time/date of processing, and different locations picked. The highest quality coffees are the densest which are separated and fermented in different tanks.

From the coffee fermentation tanks, the beans are moved to drying patios and dried to 11-12% moisture content. The coffee on the drying patios is shifted every 30-40 minutes and is shaped into long rows of no more than 5 cm in height. The coffee is continuously rotated to dry portions of the patios to help accelerate the coffee drying process. This prevents fermentation and moldy beans from developing. Drying coffee solely by patio takes 6-7 days for washed coffees.

The coffee beans are shipped from the plantations wet processing facility to Transcafe’s large warehouse in Esquintla Guatemala. When a shipping date is known, the green coffee is computer graded for uniformity of a premium product according to size, shape and weight. At the end of the grading process, all coffee is final packaged in custom labelled burlap sacks of 150 pounds each. All burlap sacks are sewn closed.

The graded coffee is picked up at Transcafe SA warehouse in Esquintla, Guatemala and transported across land to Port of San Jose, Guatemala. The container is loaded on to an Ocean Liner and shipped from San Jose, Guatemala to Vancouver, British Columbia Canada. After arriving in Vancouver, the container is then loaded onto a railcar and transported across land to Regina, Saskatchewan Canada. In Regina the coffee is unloaded and placed in storage awaiting roasting, packaging, and distribution into the local markets.

Antigua Coffee Company roasts, packages and markets its own coffee locally in Regina, Saskatchewan Canada. The roasting is only done after sales are ordered to ensure constant freshness of coffee delivered and shipped to our customers. The coffee roasts available are: medium, dark and espresso roast (upon request). Our coffee is packaged in 1, 2 and 5 pound bags. Our coffee is usually sold in whole bean form and is also available in green bean for home roasting. We will grind to your request. Our select grinds are as follows: (Coarse, Perc, Drip, Auto Drip, Fine, Espresso, Turkish)
